Canned Beef Broth Views
I'm moving in a few weeks and am trying to use up what is left in my pantry and freezer. I've got a couple boxes of pasta, some canned beans, a can of crushed tomatoes and 2 cans of beef broth. I'm not a huge meat eater and I need to come up with something to make with this. I am willing to go buy a couple of ingredients, but nothing that will last for a while. It's about 95 degrees down here in Florida I'm not really wanting to make a slow cooking stew. TIA
Cook some pasta in the beef broth. Drain the canned beans and rinse with water, draining the water before heating the beans with the crushed tomatoes. You got herbs in the house? If so, add some to the condiment. Add water if you think that the crushed tomatoes make too thick a topping for the pasta. Drain the pasta and plate it adding the heated crushed tomatoes and beans. Top with grated Parmigiano Reggiano or Pecorino Romana.
There are many different recipes for beef broth. This means that if you are making a French onion soup recipe and the recipe calls for beef broth, the flavor of your finished onion soup will depend largely on which beef broth recipe you have followed or which brand of canned beef broth you have used.
To a quart of beef broth add sauteed chopped onion, carrot, celery, frozen beans, home canned tomatoes, nettles or chiffonade hearty winter greens, chopped potatoes, home canned corn, a hearty splash of Rockridge apple cider, pilsner or red wine, thinly sliced cabbage, turnip, parsnips or other root veggies. Really anything you might have overwintering in your garden or stored in your root cellar or pantry would do. If you have frozen cooked barley or other grain some of that would be great as well. I love to serve this with quick barley biscuits instead though.
