The difference between a pie pan and a tart pan is more than simple semantics. A pie pan, often called a pie plate, pie dish, or pie tin, is a round, shallow, slope-sided dish with a flat or fluted rim to hold the edge of a pie crust. While the most popular American pie pan is made of Pyrex glass, pans made of aluminum, tin, heavy black steel, and fired clay are also available. Most pie pans are one piece, although some steel pie pans have removable bottoms.

The main difference between a tart pan and a pie pan is the shape and depth of the sides. A tart pan has straight sides (some fluted, some not) that turn out neat, more professional looking pastries than the slope-sided pie pans. Most tart pans are made of metal, and the best have a removable bottom, allowing you to slip off the outer ring without marring the beautiful crust.

I have two that came at separate times, and both came in kind of tattered clear plastic bag and both had marred finishes on the flat plate, scratches, and what looked like fingerprints that were into the finish and wouldn't wash out. Now I have to say that I have also purchased the tinned brioche pans the large and 6 or 8 of the baby ones, which are also tinned steel, and they are beauties with nice mirrored finishes on every piece...a pleasure to use and obviously look as they were made with pride...so it's hard to understand what's up with these fluted tart pans if it's the same manuacturer. I hate to go thru the nuisance of having to re-box them up and all that, you know, especially when since these were bought at separate times, I'm likely to get similar replacements.We're sorry to hear that you didn't care for the pans.
