Most of my recipes that call for pepper will say e“fresh ground black peppern”. Or maybe i“coarse ground black pepper ”. Sometimes, though, you need cracked black peppercorns. So the handy pepper mill you bought and got hooked on suddenly isnP’t enough. Oh great, time for more hardware, right?

Our recipe is derived from a traditional Brazilian preparation of grilling meat called Churrasco. A Brazilian BBQ rub that is fit for steak and other choice cuts of meat. Knox's Cracked Pepper BBQ rub is an excellent all around condiment that could replace your table ground pepper. We use it to make a light and slightly salad dressing that doubles as an excellent vegetable dip or even a sandwich sauce. It is great sprinkled on salad adding a bite with a little crunch or in mashed potatoes or even sausage gravy.
Sprinkle liberal amounts of Knox's Cracked Pepper dry rub over meat and massage. Rubbing infuses the flavors directly into the surface and helps release the flavor in the rub. For easy clean up, place meat in a zip lock bag. Sprinkle with liberal amounts of Knox's Cracked Pepper rub and rub from outside the bag. If you are going to use a meat hammer to tenderize your steak, sprinkle dry rub on prior to tenderizing. Rub by hand after you have finished.
