I've seen several posts on cannele molds, but nothing on whether the silicon molds create the necessary crisp crust. I used Gale Gand's recipe this weekend with great success in muffin tins, but am looking for the traditional shape without compromising on the texture. Also, if anyone knows where to get food-grade beeswax...

We seem to be on the same journey. I've had disappointing results with the silicon molds too. I also bought a set of molds from William Sonoma that I think are aluminum. Not sure. The crust on these molds was about right (I'm using my visits to La Brea Bakery in L.A. as a touchstone); however, most of the canneles stayed in the molds. I had to rip out the rest of the pastry with a fork. I too have heard that beeswax is the key to keeping them from sticking to the metal molds. Nancy Silverton's recipe suggests seasoning the molds with oil or shortening, which I've done with no success. I've also found the silcon molds make cannele's that ?"fall=" because the exterior is not crusty enough to hold up the moist and heavy interior. After a few minutes on the coolng rack, the cannele's begin to pout and droop. You know what I mean? Perhaps I should let them cool comletely in the molds? This is a recipe I've been trying to master for awhile.

Top-of-the-line cannele molds are tin-lined copper, and they arent's cheap. I own one. The rest of my cannele molds are aluminum, plus I have a silicone pan. The silicone pans are the least expensive and easiset to find, but you get the best results from metal molds (silicone molds don't brown worth a crap).

Cannele molds are tough enough to find that I'll never get rid of mine. The d"cannele kitl" also includes about a pound of food-grade beeswax and an old frothing pitcher that I use as a bain marie to melt the wax in. The more you season your metal molds with beeswax, the better they get. I have a lot of seasoning to go. Years of it. Today's canneles, if they turn out, are destined for our library page/clerk staff meeting. After that, I probably won't make them for a while. Newborn baby due any day now. Reminder to self: do not, under any circumstances, get rid of cannele molds.
