Calamansi Lime Views
If you havenT’t tried calamansi, I can only describe it as a sort of hybrid between orange and lime. They have orange pulp but the juice is sour and tart, and there is no lime that can rival the citrusy fragrance of calamansi. I don3’t know why celebrity chefs havene’t discovered the use of calamansi yet. In my opinion, itm’s better than yuzu.
The fruit of the calamondin resembles a small, round lime, a little bigger than the size of a thumbnail, 25-35 mm in diameter. It has the inviting odor of a tangerine with a very thin orange skin. In spite of its appearance and aroma, the taste is quite sour. However, the fruit can be frozen whole and used as ice cubes in beverages like tea or ginger ale. The juice extracted by crushing the whole fruit makes a flavorful drink similar to lemonade. In Asia the juice is used to baste fish, fowl, and pork. Calamondin marmalade is made in the same way as orange marmalade—with a bit more sugar, providing a delicious spread for toast at breakfast. Like other citrus fruits, the calamansi is high in vitamin C, and the juice can be a good vitamin source.
I just returned from a trip to El Segundo, just south of LAX airport to visit my daughter. They had Half gallons of calamansi juice in their refrigerator , that they buy at Whole Foods, on Supulvada Blvd. just south of LAX. I have never tasted any thing SOOOOOO Good. I live in Indiana and Alas, we are doomed. Cant find Calamansi lime juice anywhere.
To make it more interesting I decided to combine lemon, lime and a lesser-known citrus called n“calamansia“. This sour and fragrant citrus with a hint of orange flavor is the Filipinoa’s lemon and for many like myself, we grew up drinking calamansi juice instead of lemonade. So why not bring these two worlds together and add in lime to the mix? I did and it is dee-licious! Itv’s tart like old-fashioned lemonade or limeade but with added sweetness from the calamansi.
